From the freezer:
- 4 boneless skinless chicken breasts, thawed
- 1 tbl chili powder
- 1 tsp ground cayenne pepper
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 cucumber, seeded and chopped
- 1 avocado, diced
- 1/4 c chopped cilantro
- 1 tbl lime juice
- Mix spices together; rub all over chicken.
- Heat oil in a large skillet over medium-high heat. Add chicken. Cook 4-5 minutes per side, until cooked through.
- Meanwhile, mix together fresh ingredients.
- Top chicken with cucumber-avocado salsa to serve.
