Supplies:
- Large skillet
- Rice cooker or small pot
- 1# boneless skinless chicken breast, cut into 1-inch chunks
- 2 c brown rice
- 1 tbl garlic, minced
- 3 tbl soy sauce
- 1 tbl brown sugar
- 1/4 c peanut butter
- 1 tbl cornstarch
- 1 tbl cooking oil
- 3 c broccoli florets
- Cook rice according to package directions.
- Heat oil in a large skillet over medium-high heat. Cook garlic in oil for 1 minute. Add chicken and cook until no longer pink, 3-5 minutes.
- Meanwhile, mix together in a small bowl: 1/2 c water, peanut butter, soy sauce, and brown sugar. Set aside.
- Add broccoli. Stir into chicken. Cover and cook for 3-5 minutes, until broccoli is crisp tender.
- Add peanut butter mixture to skillet. Stir to coat.
- Mix together 1 tbl water and cornstarch in peanut butter mixture bowl. Pour into skillet. Reduce heat to medium and stir until sauce thickens.
- Serve over rice.
